Well there are a whole spectrum of both kinds of characters.
Zombies aren't all supernatural. Vampires aren't all supernatural.
And I don't think Vampires can't be seen because they don't have souls, (I mean rocks, and trees don't have souls, they are seen) I think they can't be seen because they are lingering between corporeal and noncorporeal and Humans only see them because of their power over the human will and perception.
And thats just STOKER Vampires, in the traditional European myths, it's not a part of the folklore regarding Vampires.
For Rice Vampires, they can be seen in mirrors, and don't fear Crucifixes.
For Marvel Vampires like Blade, etc. They can be seen in mirrors and don't fear crucifixes (normally).
Zombies on the otherhand, traditional Zombies, they are said to not have souls, BUT they are really just brain damaged by the Tetrodotoxin and oxygen deprivation, and convinced that they don't have souls. Making them easier to coerce and control by the Zombie Master.
Now FILM Zombies rather than Zombies in the real world, there are two kinds.
REANIMATES - Anyone Reanimated after death, by either natural or supernatural means.
And the CRAZY - Anyone who isn't dead, but is still driven to a violent rampage by natural (usually) or supernatural means.
There are both natural and supernatural kinds of both. In George Romero's movie's, it's SUGGESTED that its a Space Borne Plague, since it started occurring the same day that a Probe returning from Venus exploded in orbit.
And in the Return of the Living Dead, and it's sequels, it's caused by Trioxin, a chemical nerve agent.
In Evil Dead, the Zombies are Ghouls are supernatural in nature, being possessed by demons.
In THE CRAZIES (another Romero film), they are caused by an engineered virus code-named 'Trixie'.
In 28 Days Later, the Rage Virus.
So not all Zombies are created by supernatural means, so Zombies in a purely secular fictional world, the question of a soul would be irrelevant.
Zombies are simply formerly free willed creations which are now controlled by an outside force other than themselves, and are unconscious to their own actions.
They aren't all dead, and they aren't all created by Supernatural means.
Same with Vampires, they aren't all dead, and they aren't all supernatural.

Vampire don`t cast flections because they are in between worlds so are in limbo (living and dead) if you play vampire the masrade or any white wolf role play game then only one class of vampire can`t be seen in a mirror
