For modelling I recommend Sculpi, but fo claymation anything that air dries.

We can't answer that question for you. People are going to have different preferences. Personally, I use NSP Chavant Medium, which I like for its firmness. One can touch it without leaving a thumb-print, but it's pliable enough to sculpt easily. Others think it's like sculpting with concrete. Some like Super sculpy, which is very soft, but I think it's like trying to sculpt with jelly.
Consider whether you want a soft, pliable clay, or a firm clay.

Sculpy is supposed to be good. It's pricey though.

I have NO IDEA what I use. I get mine from Pearl Paints. I go up to them, go:
"Can I have clay?"
They go:
"White or brown?"
I go:
"Brown."
And they hand me this huge slab of clay wrapped in plastic! BEST STUFF ON EARTH. And it's uber cheap.

Try Model Magic by Crayola. It's not expensive and it takes a while to dry out. It's also really light, (as in weight).
